The trial chambers are a pretty interesting concept, a more rpg style with many mobs to fight, however, if you like getting maxed gear, like myself, the challenge can be little, if anything. I feel like making the trial spawners spawn mobs based off of the number of players, AND the quality of your armor could work.
For example, if you're a player with prot 4 netherite, and you find a trial chamber with zombie, skeleton, and silverfish spawners: the zombie spawner should spawn zombies with, at most, 1-2 pieces iron armor and an iron axe or sword; the skeletons should also spawn with armor, but also a random level of power (1-4, with 2-3 being most common), and mobs such as silverfish and the breeze should spawn in greater numbers per wave (for the breeze, maybe 2 instead of 1?)
Of course, nothing is good without balancing, like what if someone comes in with leather, or a maxed player enters with their friend who has iron armor? I think the current amount of mobs should be, more or less, a minimum amount of mobs that are spawned without any modifiers. This way, you need some gear (or insane skill with bad gear) to be able to face them, and if you go in with an lower geared player, it should either spawn in a mix of high powered (mobs with enchantments or gear) or reduce the overall quality of the difficulty (like instead of iron, chain and stone and lower levels of enchantments).
And to keep it balanced, the higher difficulty would result in slightly better/more numerous rewards.
