First: single chest.
A mimic in a single chest is rare, but can be found anywhere, in the Nether Fortress, in a dungeon, in ancient caves, near spawners, in desert pyramids, even in treasures, and, even more rarely, in villages.
A Mimic in a single chest has 40 health and deals 3-5 damage. after death, he can drop several pieces of unprocessed ore, or some kind of weapon/piece of armor made of inexpensive materials, or, less often, books with not very strong enchantments.
Second: Mimic in double chest
A mimic in a double chest has more than two times more health than a single chest, also deals about 5-7 damage, has a special attack in the form of a jump from above (if possible), or a direct strong jump that deals about 12 damage.
The double mimic is much rarely, but the loot from it is much more valuable, in the form of rare ingredients, or more expensive armor/tools.
Behavior style:
The Mimic, like a regular chest, stands in the chest's usual place, motionless, waiting for careless players. At first look, this is an ordinary chest, but if the player tries to open it, or place a block on it, the lid of the chest is immediately thrown back, revealing sharp teeth and a long tongue, after which the mimic begins to jump and attack the player. But you don't need to hit every chest to provoking the mimic. You can outwit him. To detect the mimic, you can throw a random object near the chest, and soon as the mimic feel the object nearby, he will instantly eat it with his long tongue
