What of adding a separate, nine-slot Template area to the new 1.21 crafter block where you input the pattern of the item you wish it to make? Say you wish to craft clocks. In that template area's slots you put one redstone_dust in the center slot and four gold_nuggets in the adjacent four slots, or select the pattern from the Recipe Book in the same way you can with the regular crafting table. You then feed the 'ingredients' to the crafter using accepted means and when the crafter's slots match the template, the item is produced. The template governs what is admitted into the crafter's slots, but the crafter otherwise takes no action until the template is matched. This allows you to craft *exactly* what you intend, without any guesswork, just like you do manually with the original crafting table.
Cons:
With a crafting table, YOU control what is placed in the crafting table, but an auto crafter has no such gatekeeper, and so what to do with unmatching items that might accumulate in, say, the hopper feeding the crafter, that could eventually clog it, stopping the flow? How do we dispose of them? A template could also act as a filter, diverting unmatching items out another side of the block. This solves one problem whilst creating another (complicating the Crafter). Along with the new Crafter block, what of a Filter block that has only a template and creates two streams: matching items and unmatching items?
