I would like the new breeze mob to be immune to arrows for a couple of reasons:
1. It would just make since as when the wither has the same wind-shield looking effect it is immune to arrows (They bounce off of it). This is important for the sake of continuity.
2. It would make the breeze even more interesting and unique to fight if you needed to do close combat with it. It would also be more challenging, which I think the trial chambers need.
3. Least important, but the breeze is literally a wind-based mob and should be able to protect itself from projectiles anyways. It just makes since.
Also, the arrow having the flame enchant or being shot from a piercing crossbow could counteract the effect, although maybe the winds of the breeze shield could cause the arrow to be put out so the mob wouldn't take fire damage in that case.
The devs have probably already thought of and considered this, but I'm just throwing it out there to see who else (if anyone) agrees with the idea.
