Not sure if Mojang was planning to make it this way, but probably not. I think instead of just becoming entities on the ground similar to Foxes, Armadillos should become full blocks, similar to Shulkers. They would take reduced damage in their block form and maybe only "roll up" into it if scared. Maybe they would also roll up into blocks during the night! Just imagine coming across a family of Armadillos all rolled up in the desert at night! This also doesn't seem all too hard to implement, since the code to do this already exists in the game, for Shulkers! Their block form would also help them camouflage into their environment better!
