Ambient occlusion should be disabled for snow layers (not snow blocks), at least in bedrock, as it has snow piling. Snow biomes are my favorite, and I just love seeing majestic white fields when I walk into them. However, when there are different level of snow layers everywhere around you (which is the case in bedrock, and possibly java if snow piling arrives in it), suddenly all snow around you is just filled with lots and lots of firmly contrasting dark stripes of shadows. That's not how the snow should look like IRL and neither does it look good in Minecraft. Good news is, I tried disabling soft lighting, which also removes ambient occlusion, and suddenly all the shadows on the snow layers' sides are way less dark and contrast significantly less with the snow's top color. Of course, playing with this setting unfortunately dulls the lighting for the rest of the blocks for me as well. I hope Mojang can disable ambient occlusion for snow layers so that we could enjoy snow biomes just as much in Bedrock as in Java. Thank you for your attention.
I wish I could share two screenshots I made to show the difference, but apparently I can't do that here
