This one's pretty simple.
The gamerule playerSleepTime controls what time players can go to sleep, defaulting to what it currently is in game. playerWakeTime would do a similar thing, controlling what time the sleeping skips to and the player wakes up. These both would make for good additions for players who want to challenge themselves or who want to have a unique experience. For example, a world could be set so that players can only go to sleep at midnight to make their experience more dangerous or you could configure it so that you sleep through the day instead of the night.
The gamerule sleepWithMonstersNearby would default to False and would allow you to turn off the annoying "You cannot sleep because there are monsters nearby" message. A lot of players would enjoy that.
Lastly, the gamerule sleepDuringThunderstorm defaults to True and would determine whether players can skip thunderstorms by sleeping.
