A very frustrating sight to see in Minecraft after a long mining trip is coming back up to your base, only to see patches of dirt in your beetroot farms! A hay golem could act as a sort of scarecrow, and would be able to scare off passive mobs, and prevent them from jumping on your crops. It would be able to follow you, or sit/stay like a tamed mob, to allow you to move the golem to a preferred area. I imagine it would look ‘asleep’ when stationary, and it would wait until a mob comes by, and would jolt awake and play a little animation (similar to the Evoker spell cast animation) to scare the mobs away. It’s got all bark and no bite, so if it tried to scare away a neutral mob that fights in groups like wolves or zombified piglins, they would attack it. It would not scare away hostile mobs, however, as they tend to be more brave. It could also work to lure illager patrols away from villages, tricking them into investigating it. It would have little health but would be fairly inexpensive, requiring only a hay bale, a Jack-o-lantern, and a block of wool in between (to prevent players from accidentally creating it while trying to decorate their pumpkin patch). It could also be used for some scares on your friends, if it were to jump awake when any player who didn’t build it walks nearby. With this mob, the days of post-travel farming messes would be long gone! (So long as you check on it every once in a while to make sure it’s okay.)
