Here's my idea of about this Medieval update. This includes new structures, wepons and mobs.
First, I'll talk about Towns/Cities. These are larger versions of Villages, but better. When generated in the game, it should be less common villages like as rare as mansions. The villagers in this structure can be called townspeople/townsmen. The trades of these mobs should be more expensive than villagers offer, somewhere like 10-15% higher. A town has trading spots like stalls and market including the new types of townspeople I came up with;
Redstone technician - trades redstones and other technical blocks and items
Miner - trades raw materials like raw iron including diamonds, rails and other mining items.
Merchant - these are traders sat on stalls. Like wandering traders, they offer random items but only high valued items and sell it with a very high price.
