The pistol shrimp is a small crustacean which snaps a specialised claw so quickly that it creates bubbles of boiling water which it uses to stun its prey.
In minecraft, the shrimp would spawn in coral reef biomes and create a burrow in a block of sand. They would then enter hunting mode, extending their antennae from the burrow and waiting until a mob comes within 3 blocks of them. When this happens, the shrimp exits the burrow and fires a shot at the mob. If this is a fish, the mob is stunned and the shrimp eats it. There will then be a 5 minute wait until the shrimp enters hunting mode again. If it is a player or non-fish mob, the shrimp will fire a shot that will knock it back by 3 blocks and deal 0.5 hearts of damage.
In real life, some species of pistol shrimp will form colonies inside of sea sponges. In minecraft, pistol shrimp would abandon their burrows when within 25 blocks of a wet sponge block and enter the sponge with one sponge holding up to 5 shrimp. This sponge could then be picked up in a water bucket (breaking the sponge would release the shrimp, even with silk touch). Once in the bucket, the player could press the right trigger or the equivalent key/button to 'fire' the shrimp, creating a powerful blast of water. In water, this would deal 0.5 hearts of damage, 1 block of knockback and have a range of 1.5 blocks for each shrimp in the sponge, and deal half of each of these values out of water. A blast from 4 or more shrimp would temporarily disable a shield.
