Villages could have different Tiers of technical advancements that change how they react to the player, what they can sell, the prices, and what the villages themselves look like and can contain.
There could be 3 different stages villages can spawn in;
Low tech: below current villages, only a few half finished houses using only the most basic blocks and a heavy emphasis on farming. The villagers only sell low tier gear and farming equipment but for lower prices than usual, their leveling is faster than normal but only goes to level 3. Their jobs can be changed like normal.
Medium tech: visually similar to current villages, villagers can sell more advanced items and are more diverse in their offers but can never sell enchanted diamond gear, high level enchantment books or other endgame items. More set in their jobs, meaning it takes longer to change their jobs and usually results in increased prices for a while when doing so. Need more free space than currently and their prices slowly increase if not met.
High tech: stronger than currently, castle like walls around most of the village, only spawn close to pillager outposts or woodland mansions, have trained guards that will shoot any mobs and hostile players. Need to be befriended before being able to trade, but can more commonly sell end game items and gear. Jobs can not be changed and trying to do so will result in them attacking the player. Destroying anything within their walls does so too. More expensive, slower leveling.
