Allow the UI Profile to be set per control scheme [Bedrock]

Instead of one UI profile drop-down existing under video settings, move the option under the “controls” tab for each “keyboard & mouse”, “controller”, and “touch”. Consider splitting options such as “show paper doll” between the three control schemes as well. That way, the UI can automatically switch to the preferred experience depending on the control scheme.
