Deep ocean trenches are currently empty. I suggest adding the Dumbo Octopus, a passive mob. Unlike regular squids, they use their ear-fins to "hover" near the seafloor, bringing much-needed life to the abyss.
Unique Mechanics:

The Bioluminescent Boost: They emit a soft ambient glow. If the player feeds them a Glow Ink Sac, the octopus consumes it and emits a high-intensity light for several minutes. This creates a "mobile lantern" that follows the player, allowing for deep-sea exploration without constant torch placement. Also this would add more functionality to the glow Ink Sac besides the one with signs, this could bring back some love to one of the most hated Mobs.

Sediment Sifting: When fed with Kelp, the Dumbo Octopus becomes active and starts "sifting" through bottom blocks (Gravel, Sand, or Magma). It has a chance to uncover hidden treasures like Nautilus Shells, Gold Nuggets, or Prismarine Crystals, rewarding players for interacting with them. also if you feed two of them they breed, why kelp? because it contains micro-organisms which is their main aliment.
Finally, Dumbo Octopuses would feature a cute design with their iconic ear-like fins. They would come in several colors to encourage collecting:
