Since 2011, there have been no bosses added, but if we talk about warden, there is no reason to fight it, if we talk about wither, it gives us nether star in order to make beacon, but the beacon works only around where it is placed and potions are way better if we want to travel. Now Minecraft isn't really that fun, it used to be fun some years before when we tried to kill the ender dragon.
So if we add the moon dimension (which has been created for the moon dimension in April fools update) and add a monster which we need to kill, and it can reheal itself and fly, and some underground or even floating items which we need to destroy in order to make it stop heal, or any other twist, it would be very fun to fight it, and many players will also try to kill it. When it is killed, it will drop a lot of xp (more than the ender dragon drops), and give us something like a new place to explore from which we can loot potions and even netherite armour, it will be very fun, but wait , the monster shall be twice or even thrice stronger then the ender dragon so no one just pillars up and kills it. As the moon has jump boost, it can make it harder and even fun to kill the monster,
**Conclusion -** adding a monster in the moon dimesion, making it very hard to kill, and after killing it, we get a lot of xp and a new area to explore which can give us new potions and netherite armour
