As a person who lives in the Eastern Interior of America, I live in a community who happen to have the culture of Game Hunting (Hunting Deer, Elk, Moose, Turkey, Squirrels, Bobcat, etc.). I 100% understand and support the importance of having Minecraft as a way of expressing who you are, as your builds, pets, skin is a representation of who you are in the world. Not only am I suggesting animals that we over in America hunt, but also observe, such as Eagles, Owls, and Hawks.
I feel like these animals would make a great edition to the game, especially for adventurers who seek to display their trophies from they're journeys. Take for example, the mob heads already in the game. I believe a Deer Head would be a fantastic addition to the game, adding that bit more of coziness to a cabin, perhaps?
Bobcats and Squirrels would spawn in Taiga and Giant Taiga forests, along with Mooses and Hawks. Squirrels would burrow halfway up the trunk of the tree, in a way, it would be similar to a bee's nest.
