A lot of people think that the new pots should have another utility than just a decoration. While some people say that they should be used like flower pots, I think it would be kind of strange to use them like that. That's why I propose that, just like ancient pots, like amphorae, for example, they should be used to store liquids. You might think that it would be useless and would work like a prettier cauldron. However, if it had to be different from a simple cauldron, it could hold multiple sources of water (and maybe not hold any lava?)
Now, taking another ancient greek pot type for example : pithoi (pithos in singular form). They were used to store liquids AND cereals. The new block doesn't look that different from them, that's why I think they could work the same and hold seeds. It could work a bit like a composter block : as you add more and more seeds, you see the level go higher and higher in the pot. However, compared to the composter, it would just store them and you would be able to get them back whenever you want by right-clicking the pot empty-handed (or just with no seeds in your hand). Now, of course it would be able to stock only one type of seeds at once but it would be able to hold about 2 or 3 stacks. Considering the fact that it would be long to right-click 128+ times, you could take one stack or half a stack at once by sneaking and right-clicking.
It would be less effective than a chest or a cauldron, but it would be nice addition to the decorative side.
