One thing Minecraft is severely lacking in is diversity when it comes to wildlife, I believe a good mitigation to this would be to have them to have different variations depending on the temperature of the biome they spawn in. This sort of thing already exists with husks and strays, but I believe this could be expanded upon for not just other hostile mobs, but neutral/passive mobs as well!
For example: In hot biomes such as savanas, jungles, or badlands, we could see bison or wildebeasts rather than cows- and vice versa- in cold biomes we could see yak. This type of mob variation would apply to all existing 'core' mobs. i.e. cows, sheep, pigs, chickens, zombies, skeletons, creepers, and spiders.
These variations could be as simple as reskins to be consistent with the temperature, to entirely new mobs that would take the place of their existing counterparts. Overall this would make minecraft feel much more 'alive' and be much more fun to explore.
