Currently, vases seem to be solely decorational, though this may be subject to change. If vases are to be given use, I think it would make them much more valuable to general gameplay if they had a variety of potential uses!
Planter Vase (Planter):
The current most likely use for vases, giving vases the ability to have flowers (possibly double height flowers) placed in them. To allow for the specialization of vases, they should require dirt to be placed in them first, turning the decorational vase into a planter vase.

Vase of Holding (Urn):
Similar to a shulker box, but for only one kind of item. Created by placing an eye of ender or echo shard into a decorational vase (whichever is more balanced, or possibly a third item that is a combination of the two?) and can hold up to 9 (possibly more?) stacks of one item. Has an inventory similar to a hopper, but wider, and it must be filled left to right. The item it contains is displayed in the mouth of the vase, surrounded by particles of some kind (ender particles? sculk particles?)
Fluid Vase (Amphora):
Created by placing a bucket of water, lava or milk into a vase. The type of fluid contained in a vase can be seen by the color of residue around the lip of the opening. Can hold up to 16 buckets and retains liquid on breaking. Can interact with dispensers (important!)

All functional vases need an air block above them to be able to be used.
