With the Ancient City & the Sniffer kept in mind. The petrified wood would come in not just some of the current wood types in low quantities but also scattered around for many of the possibilities from the Sniffer to see & imagine what the alive version from the Sniffer would be. It would be able to be found as submerged forests, in deserts, or scattered around places like the plains, other lively areas, & the Mushroom Islands. Horsetails can be found via the Sniffer or in rare circumstances alive, but for the ones found only via the Sniffer would be like the Pitys Withamii (Craigleith Tree), & the ancient Antarctic wood plants. This will open up to many aesthetics but also something to work for. The Petrified wood would be a bit more common than fossils but still rare, in order to add the mystery of going across biomes to try & find them all. They would also be found in the Nether Wastelands & other places in the Nether, and could also be included into what is best-known as the End Dimension. Also this could lead to the idea of ancient thorps (villages) and if there is a process for wood becoming petrified it'll have to be unexposed to air & be way considerably longer than copper oxidization. Probably about 3.5 hours or longer to make it in life because if realistic it would be maybe 3 years to match up with game time.
