There is no pure iron in silverfish.
Instead, silverfish could shed chitin needed for new armor.
    In addition, silverfish reset experience.

They should drop a new item as well as endermites something that would make sense and be useful at the same time

Illogical. Silver and iron are entirely different materials.

I mean they are meant to be a pest, but I would love to see them have a drop, maybe silver dust to make a new potion that allows the player to see infested stones, giving a short logic loop of use. Kill Silverfish, brew a potion of "Infested Sight", safely mine out blocks around or silk touch infested blocks for later shenanigans.

Endermites should drop dust that when brewed creates a "Potion of Ender", giving the player the teleport ability of Endermen when range weapons almost hit or sufficient damage (2 hearts) is dealt during the duration.

I think is an interesting mechanic, maybe even a way to represent the minerals they could have absorved from eating and digging throught stone

    I like this alot.

As a counter-point to it being illogical:
Perhaps the name silverfish refers to the grey colour which was mistaken for the colour of any grey metal that it might've actually been. I doubt the first people to discover the silverfish spent a long time determining the metal type. They'd have been too busy running from the swarm. By the time the metal was identified the name already stuck.

    Also a non-lore reasoning:
    sil·ver
    /ˈsilvər/
    noun
a shiny gray-white color or appearance like that of silver.

Either way the silverfish dropping iron still makes a lot of sense despite the initial, literal interpretation of the name.
