/gamerule doMobConversions

When set to false:

Pigs can't be converted into Zombified Piglins when struck by lightning
Villagers can't be converted into Witches when struck by lightning
Villagers can't be converted into a Zombie Villager when killed by a zombie
Zombies can't be converted into Drowned when underwater for too long
Mooshrooms can't be converted into Brown Mooshrooms when struck by lightning
Piglins can't be converted into Zombified Piglins when in the overworld
Hoglins can't be converted into Zoglins when in the overworld
Creepers can't become charged when struck by lightning

etc...
