Things like doors and signs should not make air pockets underwater, nor should they be fireproof. I know a lot of people use doors as a means to breathe under water, but it just doesn't make sense to have only certain blocks waterloggable, especially doors which spawn naturally occurring air pockets in certain shipwrecks. Making water breathing potions is a hassle, so just use other obscure water breathing methods like magma bubble columns.
As for the flammable signs and trapdoors holding lava back in so many iron farms, they'll just have to use the nether variants instead if they dont want the wood to turn on fire, because it just doesn't make any sense for you to craft something with regular wood and it to be fireproof.
