Considering the theme of 1.20 is expression, I imagined some sort of decorative block representing an certain mobs would be a good idea, giving a way to express a love for a mob without trying to wrangle it and bring it to your base. The two ways of executing the that come to mind are Relics and Dolls, though other ideas are welcome.
Relics could be crafted, or they could be uncraftable and instead traded for with clergy or masons or found as loot in corresponding structures (Dolphin and sniffer relics in underwater ruins, camel relics in desert temples, hoglin and strider relics in bastion remnants). This would be easier to constrain if they weren't craftable.
Dolls are a less Minecraft-y idea, but an abstract looking plush of an animal crafted out of wool would be a nice decorative block that could better fit the theme of self expression. I Imagine they would be harder to put constraints on, however,
Regardless, a form of animal related knick-knacks would fit the muted storytelling of Minecraft, give builds some more decoration, help fulfill the need for objectively useless but nonetheless desirable loot, is something that's neither currently feasible in the vanilla nor often attempted by mods, and be a notable and fitting addition to 1.20.
