I've seen a lot of ideas for a completely redone nether fortress, creations of new block palates for it, or completely new mobs...
That is not what I want in a new nether fortress. I would, however, utilize the blocks in the game not currently in the fortress. This definitely includes cracked, chiseled, and red nether brick. I would even add the occasional shroomlight. I think it would be pretty cool to see a bit of decayed nethereck and decayed nether brick...but only if we wanted to add a new couple blocks to the game.
The nether fortress is overall dark and empty. Pathways should be lit up with shroomlight posts and nether brick spike-structures, molding a more suitable design for a fortress. Blaze dungeons should have a variety of rooms, rather than just one. Some could place the dungeon on a podium in the center, or hanging from a chain, or surrounded by parcour and lava.
Balconies should really stand out. Arches should characterize the enormous brides and poles holding up the bulk of the structure. In a rare support, a spiral staircase should allow easier travel into the fortress from the bottom. There should be an enlarged room with a circular pool of lava and a chest hidden underneath.
At the supports, once again, surrounding biomes should interact with the posts. Basalt pillars should stagger up the sides of some of the supports. Warped fungus and crimson shelves should decorate the base.
I don't want to be outrageous, but there is SO MUCH opportunity here.
