It would be great if Minecraft had Autocrafting, for several reasons. First, some farms, like mud farms that convert mud to clay, cannot be feasibly harvested automatically to get clay blocks, as TNT drops only clay blocks. Autocrafting would help in this case if a crafting table, maybe even a special more expensive version of it, could craft the clay balls into clay automatically, allowing the player to get infinite terracotta automatically, without having to waste time to craft it ourselves, which is quite arguably a very boring task!
Another thing that Autocrafting could allow is to save storage space in very advanced farms. For instance, if someone has a gold farm that produces hundreds of thousands of gold NUGGETS per hour, than autocrafting could allow the player to convert the nuggets to ingots, and the ingots to blocks, which saves hundreds of shulker boxes, and space in chests, allowing for longer AFK sessions, without having to manually craft hundreds of thousands of gold nuggets to blocks, which will most likely take hours with the vanilla game.
Next, some recipes in Minecraft are very horrible to craft manually. For instance recipes of unstackable items like bows, swords, shovels, boats, minecarts and other useful things that take ages to craft manually as you have to craft each individual item separately. Items like dispensers, which use non-stackables in their recipe, are also very painful to craft. Autocrafting would allow players to save time and enjoy the game
