With the 1.20 update aiming towards self-expression, adding an easier, more dynamicly usable way to make music seems only fitting. In particular, this means being able to craft the various, already existing noteblock instruments into handheld items, which you could play on the move.
Each instrument would have its own recipe, obviously, but the center piece would always be the noteblock over the block, that is normally used to create the chosen instrument's tone with the rest of the recipe working to shape the instrument's appearance around that core. The end result specifically shouldn't be the real instruments in pixelated form, but rather a construct generally resembling the real instrument, visibly based around a note block.
To actually play it, the old copper horn's method would be used to cycle through the different notes. Meaning, that the note being played depends on the vertical tilt of the player's head within a range, that isn't too ridiculous, making them bop their head as they play their instrument. To make it easier to hit actually a specific note, a UI element would appear next to the crosshair when holding an instrument, displaying the currently selected note's name in its noteblock note color, as well as the one above and below, if available. This piece of UI would also cycle smoothly with the player's vision to avoid them accidentally playing the wrong note, because they were right next to the line between two notes.
