In the 1.18 preview you can still select a single biome for new world generation. However, the ocean biomes are not generated properly. They consist of uninhabited grass lands with huge hills, no animals and sea structures draped across the hills and mountains. You can still find some puddles of water, but they generally are normal oceans, even if you selected another type of ocean to be the single biome.
This has been marked as not being a bug, and working as intended. I disagreed and was directed to this webpage. So, here I am.
I always enjoyed starting my world with no resources and the struggle to stay alive, build my own land, populate it and find simple things like a grass block.
I would like this unfortunate behavior caused by the new terrain generation methodology to get resolved in a future update of 1.18 and ocean biomes taken into account. In its current state it is just being silly and the option to generate single biomes of oceans might as well be removed in my opinion.
On a side note, I really liked the suggestion I noticed somewhere else about being able to select multiple biomes. For instance, to be able to select multiple snowy biomes would provide more diversity than having to select just one. I can see the advantage in that.
