Nah, OP's just lucky. If only my 1.18 survival world ever saw the sea...

Just start a new world if the sea's that big

my old world used to be a giant ocean with small to medium islands, now the same seed is mostly deserts and savannas.

Definitely not just OP.  It is the way the new climate map works. Certain biomes are more likely to spawn near others, and certain biomes can only spawn next to certain biomes.

Thing is some of these associations lead to "traps" that the generation gets stuck in. One of my worlds is just almost nothing but desert and badlands. Once a hot biome generates, there are only a few biomes that can generate next to it. Another hot biome, or a biome that can lead  back to another hot biome. I imagine there is a similar loop possible for oceans and cold biomes..

I've seen some water but I've not seen any coral reefs. Where is all the coral?
