In Bedrock you have to hit a boat like 5 times or so to break it and being able to pick it up, even with an axe or sword, while in Java you break it in a single hit. Furthermore, each hit to the boat reduces the durability of your tool, so the process is both slow and expensive in Bedrock.
One hit breaking is great for saving time but also for avoiding error hits on the mobs in the boat.
