Something I have noticed with the new generation in Caves and Cliffs, is that the small patches of granite, diorite, and dirt don't look as great as they did before in the caves and mountains. These patches generally (in my opinion) make the caves and mountains look more cluttered, especially at the deepslate/stone transition. If there are ores at said transition the cluttered look is even worse.
I would suggest having something like a noisemap of massive size (I'm talking 1000s of blocks), essentially creating "stone biomes". These would consist of large (by this I mean 20-100 blocks in width) patches/belts of similiar coloured blocks such as: stone and andesite (and gravel?) for the original stone look; diorite and calcite for the white chalky looking rocks (these could make for some nice looking coastal cliffs with the new generation); and granite on its own (theres not really any matching secondary stone) for the brilliant orangey granite mountains you see generally in hot areas.
Now, this presents the issue of not being able to find stone anywhere in the world unless you're in the stone regions. There are not many solutions to this, the main one being to make andesite/diorite/granite/calcite able to craft stone tools and everything stone related (this has been suggested to oblivion). If you're aiming for consistency you could make all of these drop cobbled versions of themselves or just drop normal cobblestone if you're avoiding adding new blocks.
