After a little personal browsing of the ages of humanity like the Copper Age, Stone Age, etc. I feel as though there was an extremely missed opportunity to add Copper Gear and Tools. However going along this train of thought I realized that there was way more potential hiding beneath this that I really wanted to post what i think is a pretty good suggestion to add to Minecraft, now that the world height limit is being raised significantly.
Why not a have an overhaul of the Survival system including Copper and Bronze Gear and Tools, and add deep water mobs and features since those new water caves look empty. Thus why I am calling this update Age of Survival reflecting humanities history of survival.
I would like to controversially suggest that Copper Tools are the first tools you need to get Iron instead of Stone Tools. With Copper I can see Cassiterite being added and smelted into Tin to make an option for Bronze Gear, Tools, Blocks, etc. These would generate in deeper water caves where possibly new hostile mobs live. With the addition of Tin I thoroughly believe now rotting food can now be added as Tin can be crafted into Tin Cans to store food so they do not rot.
To add on to survival I would suggest a variety of new systems that are - Hot/Cold, Thirst, Smell, and Protector Systems. I need more room in a reply below this, so give me an hour to type more.
