I think there are too many mobs in Minecraft that either lack a purpose or another feature fulfills that purpose better. I will only mention those that can be changed somewhat easily and don't require a huge rework.
Polar bears: Instead of only existing to drop fish, They should have to ability to catch fish. Not the fish mobs but the item similar to how a fishing rod does it. This could be used to make fish farms with redstone.
Llamas: The problem is that other mobs do their job better. Give llamas even more storage and maybe make them spit on hostile enemies. This would make llamas a more viable transport option.
Phantoms: The slow falling potions are helpful, but the annoyance that phantoms cause is too much for the reward. Since phantoms spawn in the sky, maybe phantoms could spawn much more often the higher you are. This would mean that it would be much less likely to encounter swarms of them while building a house, it would also mean that specialized phantom farms could be more helpful and efficient.
Wandering Trader: Their trades are borderline useless, but I also don't want to discourage exploring. Maybe the best option would be to drastically reduce the prices and increase the amount of the item gained from them. Then they could be a much better way of getting exotic materials without making the player not want to explore.
Just by adjusting these few mobs alone, many more creative options could be opened up, and isn't that what Minecraft is all about?
