The azalea trees need to and no other tree because you are supposed to find an azalea tree, dig down, and follow the rooted dirt to the lush caves and that is the only way to find one unless you don’t do it on purpose
I have similar ideas and reasons behind this. Also it should be noted that the Lush Caves are found almost directly under an Azalea tree, so you just look for those. The small amount of rooted dirt would make farming and mining in forest more difficult, with rooted dirt requiring double hoeing, and being much more difficult to dig through with fist or shovel (maybe stone tier shovel required). This would force players to choose optimal terrain for different things, farming more heavily on plains (which is already easier) and mining more in plains and mountains.
