The buried ruins cave biome would essentially just be constructed of building-like chambers and corridors that have been entombed deep under stone, dirt or sand and made of various building materials. Unlike strongholds, they wouldn't be built as catacombs or tunnels, but buildings that have been buried, with collapsed sections, areas open to other caves, or partially protruding from the ground.
The type of structure itself could vary greatly by making use of the already shown off new cave types to make anything from long narrow ruins with the mesh cave type to giant rooms/complexes with the large cavern cave type. Such factors as local water levels would also contribute greatly by making flooded ruins that are half-submerged or have rivers/waterfalls flowing through them.
Additionally, making the ruins materials/styles able to vary (sandstone, stone brick, quartz brick, wood/brick, etc.) would make for an incredible amount of meaningful player experiences. On top of all this, if it is incorporated with the archeology system that is in development, the ruins could go a long way to contribute to the world's history.
I just want to find an ancient buried library in the desert with a tower poking above the surface that extends and expands under the dunes, man...
