It's in the name of the game. Also, I love building with Granite/Andesite and have found very few because they're "rare." 2 suggestions:
1) Make Mining automated: Send your character mining based on your steps. You could have unlockable tiers: 1) Coal, 2) Iron, 3) Gold, 4) Diamond. Or you could select a resource (like Granite on the low end and diamond on the high end for example) and have a some type of rate/probablity of acquiring the item per step. Each of these could be done when the game is running in the background or made more potent by selecting something like "Just Mine" in the overworld and letting your character mine while you work.
2) Make Mining active: Adventures function like caving. Why is there no specific adventure type for acquiring resources? This could be done with tiers/time limits too.
