Perhaps villages could generate with a 'jail' that iron golems would put zombie villagers inside. The jail would have iron doors with pressure plates that villagers would avoid stepping on, unless it was the only way for them to escape a zombie, illager, or player. When an iron golem would get close enough to a zombie villager, it would pick it up and carry it to the jail. If less than two of the villagers in the village weren't under attack, the golem would prioritize saving un-zombified villagers over saving zombie villagers.
