What about adding an incentive to keep them alive and repopulate instead of having them be useless to the point where players will just kill them just because they can? I've seen many people just kill polar bears because they're one of the stronger mobs in the game and they're seeking that challenge.
A way Mojang could make pandas and polar bears useful is by making them a rideable mob that can climb walls and attack but will only do so if they have a high enough bond with the player, kind of like the horses in Red Dead Redemption 2.

This takes away from the survival aspect of the game, as I think it should feel more like a gritty environment with no moral bounds.

No. This is a REALLY bad idea. New mobs shouldn't be added to the game just because they're endangered. Remember, this is a video game, not a climate change awareness game. If it were, no one would play the game, even though that is the direction that it's headed. I know that recently I've stopped playing the game due to a lack of new mobs. Last update we got 2 new mobs. Pandas, foxes, and pillagers. (Not counting villagers because they overhauled, not added, them.) That's not good enough. Also, Pandas don't do ANYTHING. They got put into the game because they were an endangered species. If you killed them and got "bad luck" that would just make players hate these new mobs even MORE, because now not only are animals like ocelots, pandas, parrots, and polar bears USELESS, now they would be worse then useless because they would be an annoyance. This is a video game, not real life. Don't try and make it like that. (Although adding more non-real life passive/neutral mobs would be good, instead of just adding irl animals to the game, that's a different discussion. For example, the mooshroom cow. Microsoft even knows this. Just look at all the unique mobs in MC Earth. But the devs of normal MC won't do it because they want to keep adding all of these dumb endangered species just because. It's awful for the game.)
