    This was more extreme than I thought it would be.
    I'm okay with most of it, but I would prefer attack damage and health to be a bit lower, maybe 2 or rarely 3 hits to die without armour, for the tier 1 mobs, or with iron for the tier 2 mobs, or with diamond for the tier 3 mobs, and without armour tier 2 and tier 3 can 1 hit kill a player, and tier 3 can 1 hit kill with iron.
    Also, the health should probably be double what it is in regular mode.
    Otherwise, it seems unplayable, bearing in mind the time it takes to get enchanted diamond armour and tools.

    This seems hard enough for hardcore mode in my opinion.

    That sounds a little bit more reasonable.  The reason I proposed such an extreme change is because I want Minecraft to feel like a survival game in hardcore mode, not merely a cheap imitation of hard mode (which itself is actually creative mode, except you have to collect resources and avoid death, the first of which is the real challenge).  In order to do that, I decided that making it a bit more realistic might be fun, and in real life you would usually be killed by a single arrow.  I guess you might be able to escape with a wound, though.

    I´m ok with no bed existing in hardcore mode, but I do not think that changing the mob health and damage values will do any good - simply because the player learns in non-hardcore mode, hard mode, how to defeat them, and has a certain expectation of the mobs damage and behavior. TheIronSniper´s idea is a better variant, too, beacuse the players health is visible to the player, but the enemies health and damage is not.

    Instead, I would recommend to make it harder to obtain blocks to build the first "hut": Instead of being able to "cut" down trees with the fist, a player would injure himself by 1/2 heart when trying. He would first have to gain sticks from the leaves, and the sticks amount when used on the hotbar would be like their durability: It would take about 10 sticks to "cut" a piece of lumber from a tree. This and more methods alike would make it very hard to obtain blocks. Another method would be the player to be unable to obtain dirt by hand, he would have to use a shovel, a wooden shovel would break after taking 2 blocks, a stone shovel would break after 5 uses. Same for mining with wooden / stone pickaxes etc.

    Also, "standing still" would still increase the hunger bar, which it currently doesn´t, not even on hard mode. A player could not go afk any more in hardcore, true, but the reason for this is that players could "trap" themselves in holes because they do not have the "fist" block breaking of any block any more and should still have a way to die.

    Last but not least, food would grow much slower, they player would be forced to find bonemeal.

    I like your thinking! My only criticism is how hard you say mobs would hit, and their health. I think they should hit hard, but one, or even two hits should not be a death sentence. Giving wither skeletons as much health as the ender dragon also seems extreme; I think a better number would be as much health as the player.

    I think that maybe In hardcore phantoms should spawn naturally at night they wouldn't be too common but still. I also think that mobs like skeletons spiders zombies or whatever should have a bit of a speed buff so that they can keep up with the players sprinting.

    Add hardcore to bedrock first.  You think bedrock is a cheap imitation, right?  Java is better than bedrock in some ways, but the people who play it are the ones who matter, and you are a java player, and act horrible to bedrock, so bedrock will always be better.
