Doesn't it sound awesome to have a massive creature floating above the landscape? Here's my idea:
Renovol (From the latin words Reno:float and Volito:Fly/hover).
This mob is massive, varying from 10-20 blocks in length / diameter. It floats above the landscape in about the same height as the Phantoms when not attacking a player. It has tentacles on the rear end, and glowing stuff on the front, which act as a light source when it moves, but stops glowing when it sits still. On its back is tough armour, from which the creature takes reduced damage from attacks. This mob is attacked by Phantoms, and when killed by one it doesn't drop anything. This mob is docile and moves in packs of 1-7. You can find the anywhere, but they're easiest to find in the plains biome (as I think plains are a bit underused). They're a bit different from most mobs in the fact that you are able to stand on top of them, similar to the way boats work. You breed them using Phantom Membrane. When killed by a player, they have a chance to drop 3 things:
1. A material used to make certain kind of footwear, which has low armour, but allows you to double-jump.
2. A material used to craft a light source, which attracts more of this mob.
3. A food source which can be cooked and eaten or crafted into a meat stew (stew which contains 2 different types of meat).
