Minecraft could have winds, and there could be a lot of additional effects because of them. For example, wind sounds, leaf and grass swaying,and sea waves, of course!...which is possible only if a certain amount of water surface area is reached.
Winds could have attributes like direction,speed/intensity,etc. When we or any entity moves opposing the direction of wind, we should get slowed down, according to the intensity of the wind, and vice versa.
Winds should have some particles with them, so that we can see the direction and intensity of them. Particles could be leaves, or dust, or flower petals, etc. More particles would mean the intensity is higher.
Winds should also affect rain and snow, making more realistic storms!
