Ice temples would be a very rare structure that would spawn in tundra biomes. They would have several floors with various mobs and loot, but at the bottom of each ice temple would lie a treasure room with extremely valuable loot, but also a sleeping ice giant. Griefing this room, opening any chest inside, or attacking the sleeping beast would wake it up triggering a boss fight. The ice giant would be able to see through walls, and one of its attacks is freezing air turning it to ice and suffocating any mobs trapped inside (which would be used against players who try to swipe its treasure and flee.) In addition, the ice giant has a powerful projectile that slows players immensely as well as a melee attack that does 20 damage (10 hearts.) The ice giant's main weakness would be the fact that it is very slow, so you can hit it with a sword several times between incoming melee attacks. If an awake ice giant kills all of its disturbers, then it would go back to sleep. When this happens, all dropped items within the temple would be added to the ice giant's treasure possibly creating additional chests in its chamber. Any water within 10 blocks of an ice giant is immediately turned to ice, and any lava within 10 blocks of an ice giant is immediately cooled to obsidian (source) or cobblestone (flowing). All fire within 10 blocks of an ice giant is also immediately extinguished. Ice giants are immune to suffocation and explosions.
