Custom trades are already possible in vanilla Minecraft, but they're not feasible without relying on third-party programs or an intimate knowledge of commands. I would recommend adding a "customize" option in the villager trading menu in Creative Mode that would allow the player to take out the existing trade items and then place their preferred items in the vacant slots. This small addition will breathe a lot of life into the beautiful but otherwise empty cities and towns where vanilla testificates simply don't fit.
I would love to see this feature in Minecraft, and I believe the community would use this tool as a means of building even better worlds for others to explore, adventure and earn heaps of custom loot. Firework shops, magic shops, banks, payment for mob loot like rotten flesh, etc. I can think of hundreds of uses for custom villager trading, and I'm sure others can think of hundreds more I would never have considered.
