By disguising themselves as friendly and neutral mobs, I feel maybe they should also have a faintly different sound to the original mob. For example, they could disguise themselves as a.. Cow. Instead of making the same noise you hear from cows regularly, the imp's sound is slightly out of pitch. That way you can tell when a mob is an imp, but only when you're paying attention?

For the item(s) they drop, maybe they would have a chance to drop an enchanted iron sword (or "dagger") with good, but not great enchantments. If you were to make them thieves, maybe they could also have a chance to drop minerals from coal to diamond as well? Diamond being the rarest drop (except for the iron "dagger")?

The imp is a thieving mob, who is interested in the player’s food more than causing the player harm. It would be fast like an ocelot. This small one block tall mob would wander around the nether alone, but when the player is within sight would run up and strike the player dealing little to no damage, but any food items located in the players hot bar would be taken. Items in the inventory would be safe.

After obtaining what it wants it would retreat to areas of safety, such as into lakes of lava. It should take no fall damage, allowing it to jump from high cliffs to avoid being killed. It would also quickly begin to consume any food it takes, gaining any potential effects.  If the player is able to kill it before it consumes all the food, the player will retrieve any food which has not been eaten.

The imp would be about the side of a baby zombie pigman.  It would be camouflaged so as to be difficult to identify unless the player is paying attention.

Food is a resource the player usually keeps at the ready to heal; losing the food to this creature would make the nether even more dangerous.

The drop should also be whatever they stole from you, and they should run away from you with a laughter when they succeeded in stealing something xD

I like it, reminds me of Dungeon Keeper, hahaha

I love the idea that making a Nether Portal has an effect on the world

Makes in-game progression feel more impactful
