I feel like - much how many other things in Minecraft have been updated stylistically - the armor is deserving of a similar love. Despite the retexturing of the armor, there is nothing stylistically different. The armor still looks much the same as it has for the past, well, forever. I think an interesting feature would be to add armor customization for all the other normal sets. With leather, you can add color, and with netherite, armor trim - but all the other staple armors have nothing. I feel some feature of the smithing table (or perhaps a new armor related table) could be used to change the design of your favorite diamond, iron, or gold gear. It doesn't necessarily have to be custom - it could be chosen from a few presets of armor textures - but anything to change the way the basic armor looks would be fascinating.
Take the netherite helmet, for example. The longer side guards on the edges give it a million times more character than the average diamond helmet. With added trim, it looks incredible - leaves that regular old diamond helmet in the dust! I feel that at least a little could be done in this area to just give even the most basic of tools that much more flair.
