Here are 2 ideas for end biomes:
1. a Phantom Forest biome featuring medium-sized islands with occasional chorus plants but mainly purplish trees. Said tree's logs have a special property of being able to be passed through when the player is sneaking, fitting the theme of 'phantom'. The biome itself also has phantoms, and since phantoms drop phantom membranes, which repair elytras (found in the End), phantoms should be a reasonable spawn. With this Phantom Forest biome, it fits the overall End theme, allows all 3 dimensions to have tree types, and gives a new place for phantoms. Other minor details for this biome include spawning of endermen, and maybe decorational hole(s) within some islands.
2. an End Sea biome featuring large, flat end islands, filled in the middle with water, almost like floating lakes/seas. It does not really serve a functional purpose other than maybe having some unique structures in the future, but it does fit the lore of End Ships from the End Cities, as ships usually pair well with water. No endermen will spawn here due to hating water. Other minor details include similar End Ship structures from the end cities floating above these End sea-islands, with worse loot and possibly no elytra, as well as decorational, smaller End islands with a pool and waterfalls leading down to the End sea-islands.
