I think that the direction the developers are going is almost right but not completely. Many people have pointed out clear problems that may require a special toggle in the setting menu (ie super flat worlds) but, for regular worlds some of the trades should change (specifically for librarians).
I think having specific enchants being a final trade for specific biomes is great (very annoying but it will add more challenge!). However, there should be generic enchants that all biomes should trade (eg unbreaking, protection (just the plain old one) and any other ones which people aim for base game). Slightly later game enchants could be specialised to biomes that make sense and enchants that go with only one item could possibly be found in chests (ie trident enchants in water ruins and crossbow enchants in pillaged towers/woodland mansion) - this might annoy others but these are late game things that long time players can easily obtain given enough time.
As a final thought I think that for generalised enchants all of the levels should be possible to obtain and any final trade enchants should be the max level they can be! If the thing developers are not liking is the 1st trade being an enchant they can tie generic enchants to specific trade grades (ie unbreaking for lvl 2 librarians and protection for lvl 3 librarians). It will need fine tuning but everything does if it has a huge impact on the community. Also players should be able to put leads villagers? Maybe special ones?
